This year, for Thanksgiving at Potlatch, the Pilgrim’s turkey was replaced by a pig. There was turkey for the traditionalists, and all the usual offerings of mashed potatoes, cranberries, and assorted pies, but the star of the holiday was a one hundred twenty-five pound pig from the University of Georgia Ag School.
As usual there was a large crowd of family and friends to do all the work for the weeklong affair, cooking and more cooking, and schlepping firewood for the several outdoor stoves and fire pits. This year the roasting of the pig, Earnest Hamingway, took center stage for a determined crew directed by Pig Master and Pork Lord, Lane Seabolt. Purveyor of the pig, he supervised the building of the fire pit and oversaw the two day roasting. Accompanying photos speak to the resounding success.
